Sequillo Red
Syrah(70%) make out the biggest percentage of the blend. In 2006 the Syrah had
an incredible ripening and displays the classic “garrique” spectrum of flavours.
This very spicy component is very marked in the overall blend of the 2006
Sequillo. It is maybe the most classic wine we have produced to date. The
percentage of the Mourvedre is slightly lower in this vintage as one of our
vineyards had some drought stress and we decided to only incorporate the fresh
more tightly woven parcels of Mourvedre. The tannin and structural texture we
found in the 20% we included in the blend married well and gave the wine more
depth. The Grenache at 10% make out a tiny percentage of the final wine but it
has a huge effect on the final blend.

Sequillo White
Vinification:
The grapes are pressed in an old basket press and the juice run off directly to barrel without settling. About 25% of the Chenin Blanc ferments in stainless, the remainder of Chenin Blanc as well as the entire production of the Grenache
Blanc, Roussanne and Viognier is vinified in French oak barrels.
Oaking:
Burgundy Traditional selection. Tight grain. The aging takes place for 12months on the lees. The wine is only removed from the lees a couple of days prior to bottling, so for most the lees aging is for 12 months and then the wines was
bottled un-fined nor filtered.
